Whether it’s for a family cookout, a Fourth of July party or just a Wednesday night dinner, the grill offers countless meal options for any occasion. However, it’s easy to associate the grill with the same few things.

Chicken, hamburgers, steaks and other meats seem to always get priority when it comes to cooking on the grill. But there are plenty of healthier options you can go to for a great side dish, or even main course.

Grilled vegetables can be an easy addition to your summertime menu. While you can mix and match all your favorite veggies to your meal, try some of these tips to get started that will get even your kids eating healthy.

Grilled Corn

Total Time: 30 minutes

  1. Heat the grill to medium.
  2. Pull the outer husks down the ear to the base. Strip away the silk from each ear of corn by hand. Fold husks back into place.
  3. Place the ears of corn in a large bowl of cold water with 1 tablespoon of salt for 10 minutes.
  4. Remove the husks of each ear of corn. Place the corn on the grill, close the cover and grill for 15 to 20 minutes, turning every 5 minutes, or until kernels are tender.

You can eat the corn on the cob or remove the kernels.

Grilled Carrots

Total Time: 25 minutes

Ingredients

  • 1 pound carrots
  • 4 Tbsp. butter, melted
  • 1 Tbsp. balsamic vinegar
  • 1 tsp. chopped fresh rosemary

Directions

  1. Heat the grill to medium.
  2. Wash carrots and peel, if desired.
  3. Whisk together butter, vinegar, and rosemary. Arrange carrots on top of aluminum foil before drizzling mixture on top. Seal foil, enclosing carrots in a pouch.
  4. Grill for approximately 20 minutes, turning halfway through.

You can mix in any combination of butter and spice or herb to make this recipe.

Grilled Potatoes

Total Time: 70 minutes

  1. Heat the grill to medium.
  2. Scrub potatoes clean and poke holes all around potato. Wrap each potato in aluminum foil twice.
  3. Place on the grill (if using a gas grill, place on top). Leave them there for an hour, turning at the 30 minute point.
  4. Remove from grill and discard foil wrapping.
