Mellow Mink Brewing will open its doors in the Hampden Center shopping center on the Carlisle Pike in Hampden Township on Aug. 31. The taproom will be open from 4 p.m. to 10 p.m. that day. Labor Day weekend hours will be 2 p.m. to 10 p.m. Saturday and noon to 6 p.m. Sunday.
The craft brewery, which has been in the works since last year, was started by Matt Miller, a longtime homebrewer and pharmacist, and his husband, Cole Taylor, a photographer and dental assistant.
The brewery plans to sell sour and farmhouse styles, such as saison beers. These funky beers make use of fruits, flowers and spices. Other classic beer styles, including India pale ales and stouts, also will be available, along with homemade sparkling waters and sodas on draft.
Most of the beers will be available for to-go growler purchases.
In addition, Mellow Mink will offer a selection of locally sourced wines and spirits.
Mellow Mink will not have a kitchen, but will offer limited pre-packaged foods. Brewery customers are encouraged to bring their own food or have food delivered to the tasting room. The tasting room at Mellow Mink has more than 70 seats with a large bar area and several big-screen TVs.
After the grand opening weekend, Mellow Mink will be open weekly Thursday through Sunday. Normal hours will be 4 to 10 p.m. Thursdays and Fridays, 2 to 10 p.m. Saturdays and noon to 6 p.m. Sundays.
