New Lancaster restaurant to feature Australian flavors

Australian cuisine will be a hallmark of the Aussie & the Fox restaurant scheduled to open in Lancaster next month.

The grand opening is scheduled for Aug. 20 at 38 W. King St., where Australian and global cuisine as well as local specialties will be served for breakfast, lunch and dinner Tuesday through Saturday, plus Sunday brunch from 10 a.m. to 2 p.m. A takeaway window christened The Tucker Box will begin serving breakfast and lunch and distinctive Australian coffee July 30, according to a news release.

The restaurant is a project of retired Armstrong Industries executive Frank Fox, his granddaughter Julia Garber and her Australian-born fiance, Colin Morrell, who have updated and redecorated the historic 1800s building.

The team reports bringing in twin Australian barristas Nakita and Sasha Coleman to put the staff though “a rigorous training” on how to brew an authentic cup of Australian coffee, which they say involves just enough steam and not too much water.
